The Sias Cheese factory is born from the desire to transform into a tangible reality an ancient Sardinian tradition handed down from father to son for generations. The Sias Cheese factory transforms every day the milk of ten thousand Sardinian sheep coming from organic and conventional farms in a wide range of dairy products.
The demand and the commercial distribution cover, in addition to the Sardinia Region, the national and international territory, with a particular focus on the European Union countries and on the extra-European nations more sensitive to the market of dairy products.
In 1999, the objective of economically enhancing an ancient flavor, gives rise to a company aimed at producing high quality sheep cheeses in harmony with the regional tradition combined with agronomic and zootechnical innovation and environmental protection.

The Marghine-Montiferru area, in particular Macomer, the capital of the Sardinian dairy industry, has always been an area evoked for the production of sheep's cheese. Prior to the processing of milk, since 1992 the farm has been operating in the livestock breeding under the AIAB regime and respecting the EEC regulation 2092/91 on organic farming. For the dairy company, immediately equipped with modern production technology, we have chosen the artisan dimension, which allows a more precise control in the different stages of the production process, and is able to guarantee maximum production and nutritive quality and taste in the various cheeses and ricotta. These characteristics have rewarded the company since the first years of activity at various international editions (including the competition on organic cheeses "Biocaseus", 2001, 2009). The meeting of the artisanal characteristics, applied to the production process and the finished product, with the company organization focused on increasing the production capacity is fundamental for the success. The technological and process characteristics used in the processing phase have been organized to promote gradual and continuous commercial growth. The products of the Sias Cheese factory meet the needs of the international market to taste a typical regional product, Pecorino cheese and its related range, which meets the requirements of freshness, naturalness and genuineness. The Production Chain

The milk is withdrawn daily from sheep farms and transported in special cisterns to the dairy where the transformation will take place. The person responsible for receiving the milk ensures that the product meets the quality standards checked by a certified and accredited SINAL laboratory. At this point it is discharged, filtered and temporarily stored at controlled temperature until the beginning of the working process. This consists in pasteurization, coagulation in polyvalent with addition of lactic ferments, rupture and discharge of the curd; the characteristics of these processes vary according to the type of finished product. The phases of salting, drying and maturing of the shapes follow.Every single finished product is identified by a traceability system, containing information on the origin of the milk, the date, the detail of the processing and the seasoning. This tool, in addition to favoring the correct management of the warehouse, ensures traceability in the market, which translates into a guarantee for the consumer.

Dairy Sias is present internationally thanks to the ability to adapt its products to the different preferences of the markets.

The slender size of the company organization ensures the direct and continuous control of the level of customer satisfaction. The simplicity of the distribution chain favors the traceability of the evolution of market preferences. This allows the Caseificio Sias to study and continuously research possibilities for the development of new types of products.

The distribution of products is carried out in retail markets, through a network of commercial representation, and wholesale, through direct relationships with wholesalers.
